The top Berlin-based chef and restaurant owner The Duc Ngo, who has shaped the German capital's Asian cuisine offers with concepts such as Kuchi, Cocolo Ramen and Madame Ngo, meets Cornelia Reiher, Japanologist and head of the research workshop 'Berlin’s Japanese foodscape' at Freie Universität Berlin, and the food journalist, author and recipe developer Stevan Paul. They will discuss culinary innovation, memories and migration in a soup pot, the art of cooking, trends and the fine line between authenticity and appropriation with the host Dieter Kosslick. The panel provides insights into cuisines that have changed cities – and shows why ramen and similar soups now stand for a new, cosmopolitan culinary culture.
